Vegetable Egg White Scramble
- Heat the olive oil in a non-stick frying pan over medium heat.
- Add the mushrooms and red pepper. Cook for 3–4 minutes, until softened and excess moisture has evaporated.
- Add the spring onion and spinach. Cook until the spinach wilts.
- Reduce the heat to medium-low and pour in the egg whites.
- Leave the egg whites undisturbed for about 15 seconds, then gently fold them through the vegetables as they set.
- Season with garlic powder, salt, and black pepper.
- Fold in the feta and remove from the heat when the egg whites are fully set but still soft and slightly glossy.
- Serve immediately.
Spinach and Feta Egg White Muffins
- Preheat the oven to 350°F (175°C) and lightly coat 8 muffin cups with cooking spray.
- Heat the olive oil in a pan over medium heat.
- Add the red pepper and onion and cook until softened.
- Add the spinach and cook until wilted and excess moisture has evaporated.
- Divide the cooked vegetables evenly between the 8 muffin cups.
- Add the crumbled feta to the muffin cups.
- Whisk the egg whites with oregano, garlic powder, black pepper, and salt.
- Pour the egg-white mixture into the muffin cups until each is about three-quarters full.
- Bake for 18–22 minutes, or until the centers are completely set and the tops are lightly golden.
- Cool for a few minutes before removing the muffins from the tin.
Vegetable Egg White Fried Rice
- Heat half of the cooking oil in a large non-stick frying pan or wok over medium-high heat.
- Add the carrot, mushrooms, and peas and cook for 3–4 minutes until just tender.
- Push the vegetables to one side of the pan.
- Add the remaining oil to the empty side of the pan.
- Pour in the egg whites and gently stir until softly scrambled.
- Add the cold cooked rice and mix everything together.
- Add the spring onions, soy sauce, sesame oil, and grated ginger.
- Stir-fry for 2–3 minutes until the rice is hot and evenly coated.
- Serve immediately.
Courgette Parmesan Egg White Fritters
- Place the grated courgettes in a bowl and sprinkle with salt.
- Leave for 10 minutes to release excess moisture.
- Squeeze out as much liquid from the courgettes as possible.
- Combine the courgettes, egg whites, Parmesan, breadcrumbs, garlic, and black pepper in a bowl.
- Mix until all the ingredients are evenly combined.
- Heat the olive oil in a non-stick frying pan over medium heat.
- Spoon small portions of the mixture into the pan and gently flatten them into fritters.
- Cook for 3–4 minutes per side, or until golden brown and cooked through.
- Transfer the fritters to a plate and serve warm.
Notes
- Use liquid egg whites or separated fresh egg whites in any of these recipes.
- Cook egg whites gently to prevent a dry or rubbery texture.
- Remove excess moisture from vegetables before adding them to egg-white dishes.
- Cold, preferably day-old rice gives the fried rice a better texture.
- Squeeze the courgette thoroughly or the fritters can become too wet to hold together.
