Clover Club Cocktail

A classic Clover Club cocktail made with London dry gin, fresh lemon juice, raspberry syrup, and pasteurized egg white. A dry shake creates the signature silky texture and thick raspberry-tinted foam.

Ingredients
  

  • 2 oz London dry gin
  • 3/4 oz fresh lemon juice
  • 1/2 oz raspberry syrup
  • 1/2 oz pasteurized egg white
  • Ice cubes as needed
  • Fresh raspberries for garnish

Method
 

  1. Add the gin, fresh lemon juice, raspberry syrup, and pasteurized egg white to a cocktail shaker without ice.
  2. Dry shake vigorously for about 15 seconds to aerate the egg white and create a thick foam.
  3. Add ice cubes and shake again for 10–15 seconds until the cocktail is well chilled.
  4. Double strain the cocktail into a chilled coupe or cocktail glass.
  5. Garnish with fresh raspberries and serve immediately while the foam is thick.

Notes

Use pasteurized egg white because the egg white is not cooked.
For the best foam, dry shake vigorously before adding ice.
London dry gin gives the most classic flavor, while Plymouth-style gin produces a softer result.
For an egg-free version, replace the egg white with 1/2 oz aquafaba.
If the cocktail is too sweet, slightly reduce the raspberry syrup. If it is too tart, add a small amount of extra raspberry syrup.
Serve immediately because the egg white foam gradually collapses.
