Method
- Preheat the oven to 400°F (200°C) and position a rack near the center.
- Lightly coat a mini muffin pan with cooking spray if needed. A silicone mini muffin pan works especially well.
- Add the egg whites, garlic powder, onion powder, smoked paprika, salt, and black pepper to a mixing bowl. Whisk gently until evenly combined.
- Pour about 1 teaspoon of the egg white mixture into each mini muffin cavity. Keep the layer thin and avoid overfilling.
- Bake for 12–16 minutes, or until the centers are completely dry, the edges are golden, and no shiny wet spots remain.
- Remove the pan from the oven and let the chips rest in the pan for about 2 minutes.
- Transfer the chips to a wire cooling rack and allow them to cool for another 5 minutes. They will become crispier as they cool.
- Serve immediately or allow them to cool completely before storing.
Notes
Keep the egg white layer thin for the crispiest chips.
Do not whip the egg whites into foam; whisk only until the seasonings are evenly mixed.
If the chips are still soft or shiny in the center, bake them for another 2–3 minutes.
Allow the chips to cool on a wire rack before judging their final crispness.
If stored chips become soft, bake them at 300°F (150°C) for 3–5 minutes and cool again.
Carton liquid egg whites or fresh egg whites can both be used.
Optional seasonings such as Parmesan, chili powder, cayenne, dried herbs, or everything seasoning can be added in small amounts.
