Method
- Lightly coat a large microwave-safe bowl or mug with cooking spray.
- Add the liquid egg whites, water, salt, and black pepper. Whisk until well combined.
- Microwave for 40–45 seconds.
- Remove the bowl and stir the partially cooked egg whites, bringing the cooked edges toward the center.
- Return to the microwave and cook in 15–20 second intervals, stirring as needed, until the egg whites are just set.
- Let the egg whites rest for about 30 seconds. Top with chopped chives or your favorite additions and serve warm.
Notes
Microwave wattage can vary, so use the cooking times as a guide and check the egg whites often.
Do not overcook the egg whites, or they can become dry and rubbery.
Use a large microwave-safe mug or bowl because egg whites can expand while cooking.
For a softer texture, add 1 teaspoon of water before microwaving.
Carton egg whites or fresh separated egg whites both work well.
You can add spinach, bell pepper, feta, cheddar, salsa, chives, or herbs for extra flavor.
If adding watery vegetables such as tomatoes, mushrooms, or frozen spinach, cook or drain them first.
