- Preheat the oven to 350°F (175°C) and generously grease a 12-cup muffin pan with nonstick cooking spray.
- Add the egg whites, cottage cheese, salt, black pepper, and optional hot sauce to a blender. Blend just until smooth.
- Combine the diced turkey sausage, red bell pepper, grated white cheddar, and sliced green onions in a bowl.
- Divide the sausage and vegetable mixture evenly between the 12 muffin cups.
- Pour the blended egg white mixture evenly over the fillings, leaving a little space at the top of each cup.
- Bake for 25 to 30 minutes, or until the centers are fully set.
- Let the egg white bites cool in the pan for a few minutes, then carefully remove and serve warm.

- Blend the egg whites and cottage cheese only until smooth to avoid incorporating too much air.
- Finely chop the fillings so they distribute evenly throughout the bites.
