Blend for 15–20 seconds until smooth.
Let the mixture rest for 2 minutes so excess air bubbles settle.
Lightly grease a nonstick skillet and heat it over medium-low heat.
Pour approximately 1/4 cup of batter into the skillet.
Tilt and rotate the pan immediately to spread the mixture into a thin, even layer.
Cook for 90 seconds to 2 minutes, until the surface is dry and set.
Carefully flip and cook the second side for another 20–30 seconds.
Transfer the cooked sheet to a plate and repeat with the remaining mixture.
Allow all the egg-white sheets to cool completely.
Stack the sheets, roll them loosely, and slice into thin noodle strips.
Add the noodles to your prepared sauce or broth and warm for only 30–60 seconds before serving.
